It’s important to know how to pick the best and freshest produce when you’re shopping at the grocery store or farmer’s market. When picking a cabbage, look for a very solid, firm, and heavy cabbage. How to make this easy cabbage salad
The salad is a breeze to make: first prepare all the veggies. Finely chop the cabbage, julienne the carrots (or grate on the coarse side of the box grater), and finely chop the radicchio (if using). Add all the veggies to a large salad bowl.
Combine all the dressing ingredients in a mason jar and shake vigorously to combine. Toss the salad with the dressing and serve immediately. Ingredients
Salad
- 1 small head of green cabbage
- 1 medium carrot
- 1/3 head of radicchio, (optional, see note*), 1 cup chopped
Dressing
- 3 Tbsp olive oil
- 3 Tbsp lemon juice, from about 1 medium lemon
- 1/2 tsp garlic powder
- 1 Tbsp Dijon mustard, heaping
- 1 Tbsp honey (or sugar)
- 1/2 tsp sea salt
- Few pinches black pepper
Instructions
- Thinly slice the cabbage, julienne the carrot, and thinly slice the radicchio. Combine in a large salad bowl.
- Combine all the dressing ingredients in a mason jar with a lid. Close and shake vigorously for a minute.
- Toss the salad with dressing and enjoy immediately!
Notes
- *Radicchio is a very nutritious addition to this salad; however, it tastes bitter and some people don’t prefer it so I listed it as optional. I think the bitterness is offset by the sweetness of the cabbage and the dressing, so it does not taste harsh. I also love the boost of nutrition and vitamin K it provides, as well, so I personally love to add it.
- Any leftover dressing will stay fresh in the refrigerator for at least a week.
- When you first add the cabbage in step 1, you can squeeze it a few times (with clean hands) to soften it up and make it more tender. Then proceed with adding the other ingredients.Ā
