Garlic Parmesan Roasted Asparagus

Delicious garlic and parmesan roasted asparagus is the perfect quick and easy side. It takes only 7 minutes to roast! Slightly nutty, deliciously cheesy, and pairs beautifully with many seafood, chicken, or steak dishes.

Now that we are well into February, the cold days have been upon us and have me baking away to keep warm. Caleb continues to toil away on the house – day and night – with the help of our incredible friends. The renovations have progressed to the guest bathroom where he is replacing everything entirely.

Inside the house is still a construction zone, and now Caleb is framing in a new pantry for our kitchen! …I KNOW I’ll need it! I can’t wait to show you guys our brand new kitchen when we’re all done with it!

I’ve been roasting ALL the veggies this week and one of my favorite and easiest is asparagus! This nutty roasted asparagus is topped with delicious parmesan and perfectly seasoned with garlic…. Mmm eating healthy sure tastes good.

Throw them in the oven for 7-8 minutes and you have yourself a really yummy side to – anything really! With nearly no cleanup. This recipe is one of our favorites to make year-round, especially when we make our favorite salmon.

How to pick asparagus

Now that we are just entering asparagus season in the US (late February through June), you will start seeing fresh US grown spears on sale. It’s the perfect time to get some and add a yummy side to your meal. But how do you pick good, fresh asparagus?

It’s important to know because older spears can taste really woody, tough, and unenjoyable. Yuck!

  • Pick very bright green (not yellowish) asparagus spears
  • Inspect the tips to make sure they are in good shape – not wilted, wet looking, or mushy. Fresh tips look compact.
  • Choose very firm spears that don’t look wilted, slightly dry, or limp
  • Pick asparagus spears that aren’t too thick

How to make the best garlic parmesan roasted asparagus

Preheat the oven to 425°F and start preparing your asparagus for roasting. Line a baking sheet with aluminum foil and grease it, just a bit. Wash and dry the asparagus, then snap off the woody ends.

Just spread them out on the baking sheet and drizzle with a bit of oil (1/2 tsp to 1 tsp will do – more can make the asparagus feel too wet/oily coming out).

Sprinkle some salt, pepper, garlic powder and toss gently… Now add the parmesan on top and you’re ready to pop it in the oven for a quick 7 minutes or so. They come out with an incredible, nutty, garlicy aroma…

How easy and fast was that? So much flavor and it’s ridiculously easy to make. Not to mention… the clean up is just tossing out your foil or parchment paper! We make this ALL the time, and our whole family loves it.

If you’re baking something else along with the asparagus, I recommend sticking to a higher baking temperature (400°-425°F), as the asparagus cooks best at a higher temperature for optimum crispy-ness and most delicious spears.

What goes well with roasted asparagus?

So many things we love! We have asparagus so often, we’ve had just about everything with it. Wild salmon and roasted asparagus is my favorite classic combination. You can never go wrong with that. Other suggestions include…

  • Roasted or grilled chicken or turkey
  • Shrimp, flounder, cod, or any other fish
  • Any type of steak
  • Roasted potatoes or mashed potatoes
  • Mushrooms
  • Pastas
  • Buckwheat

Description

Delicious garlic and Parmesan roasted asparagus is the perfect quick and easy side. It takes only 15 minutes to make! Slightly nutty, deliciously cheesy, and pairs beautifully with many seafood, chicken, or steak dishes.


Ingredients

Units Scale
  • 1 lb asparagus
  • 1/2 tsp avocado or olive oil
  • 1/4 tsp sea salt, or to taste
  • 1/8 tsp black pepper, or to taste
  • 1 tsp garlic powder
  • 3 Tbsp shredded Parmesan cheese

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with aluminum foil and grease it very lightly with a little butter.
  2. Wash and dry the asparagus stalks. Trim the ends on each one to get rid of the woody parts.
  3. Place asparagus on the baking sheet and drizzle with avocado oil. Season with salt, pepper, and garlic powder. Toss gently to make sure seasoning is evenly coating the asparagus. Sprinkle with parmesan.
  4. Bake for about 7 minutes until tender, but crisp. Enjoy!

Notes

Cooking times may vary depending on the thickness of asparagus. Very thin asparagus may only need a total 6 minutes cooking time, but thick asparagus may need 8-9 minutes. 

Be careful not to over-bake the asparagus. It can become wilty and too soft.

    At your suggestion, I served this with the Honey Lemon and Ginger Salmon in Foil and roasted potatoes. The asparagus had the perfect crunch and, along with the potatoes, complemented the salmon well. We had just enough leftovers for a light dinner tomorrow.
