If you’re looking for the most delicious frozen fruity snack on Earth, look no further because today I’m sharing my favorite smoothie recipe… And it is so good, guys. If you’ve ever traveled to Iceland and tried their traditional Skyr, you could totally understand the overwhelming excitement of putting it in a smoothie.
Antioxidant-rich blueberries blended together with creamy Skyr, banana, and a bit of milk! So simple and the texture is spot on. It’s so smooth and creamy, not icy or slushie-like at all! I could drink it all day…
About four years ago me and my husband traveled to Iceland where we got engaged! The black sand beaches, the ice caves, the hot water springs, the northern lights, the crazy beautiful terrain, and THE FOOD! It’s a list that doesn’t end… The urge to make this a travel blog post is real. That was a trip I highly recommend.
What is Skyr?
In a nutshell, Skyr is a traditional Icelandic super rich, creamy dairy product that is full of protein, full of probiotics, contains less sugar, and tastes amazing. It’s thicker in texture than yogurt and has unique cultures unlike Greek yogurt and other similar products. Icelanders have enjoyed Skyr for a thousand years! It’s easy to see why. It also happens to be the perfect smoothie companion.
When we came back from Iceland, we couldn’t find Skyr anywhere in the US. Over the next few years, a few companies have popped up making Skyr that was similar to what we had in Iceland, but not the same. Icelandic Provisions Skyr is the best I’ve had in the US. That’s not bad if your Iceland plans have to be postponed!
Why you should make an Icelandic Blueberry Smoothie
I am SO excited to share this recipe with you today. Because, guys… it’s been way too long since I’ve shared recipes and I don’t actually have a kitchen right now. It is very likely I’ll be drinking smoothies for breakfast and maybe lunch for the next couple months. And I am absolutely more than okay with that.

What you will need
You’ll need only 4 ingredients:
- Frozen blueberries
- A large banana, preferably chopped and frozen
- Skyr – it does matter which you use. My very favorite is Icelandic Provisions Skyr. It tastes very similar to the skyr in Iceland. My husband loves the Siggis brand as well – the slightly tart taste offsets the sweet perfectly.
- Sweetened or unsweetened almond milk. You may substitute cashew milk, cow’s milk, or oatmilk.

Ingredients
- 1 cup frozen blueberries, heaping
- 1 large banana, preferably chopped and frozen pieces
- 5 oz Skyr, 150 grams (see notes below)
- 1/2 cup almondmilk (sweetened or unsweetened), start with 1/3 cup for thicker consistency
Instructions
- Place all ingredients in the blender and blend until very smooth.
- Enjoy immediately!
Notes
Icelandic Provisions Skyr is a WONDERFUL choice for this smoothie, Pick their Strawberry Lingonberry or Blueberry Bilberry Skyr, or any of them! Siggis is a great option too, it has a slightly tart taste that offsets the sweet of the blueberry.
Substitutions: Use regular milk or your favorite plant based option instead of almondmilk.
If you enjoy a thicker smoothie, I recommend to start off with 1/3 cup milk and add more as you need.
Currently, I’m using the Oster Blender and I like it a lot! It’s quite sturdy and has held up well. I have also heard wonderful things about both the Vitamix and the Blendtec blenders (they are pricier). These are definitely on my wish list!

Skyr is so yum! Icelandic Provisions has a delicious coconut one if you want to alter your smoothie into a Hawaiian experience.

As you know, I try all of your recipes. This one sounds good. I appreciate your posting links to the stores that carry the two Skyr yogurts that you recommend. I as surprised to find that Food City carries both and Publix carries one of them. I will be trying this smoothie recipe soon.
I buy Walmart Great Value organic blueberries, which are good in the protein shakes that I made, but if I can find the Simple Truth organic blueberries, I will try them on your recommendation.
