Refreshing, smooth, cool and satisfying – this Icelandic blueberry Skyr smoothie is everything you’ve been craving. Perfect for a quick, healthy breakfast or mid-afternoon snack!
Ingredients
- 1 cup frozen blueberries, heaping
- 1 large banana, preferably chopped and frozen pieces
- 5 oz Skyr, 150 grams (see notes below)
- 1/2 cup almondmilk (sweetened or unsweetened), start with 1/3 cup for thicker consistency
Instructions
- Place all ingredients in the blender and blend until very smooth.
- Enjoy immediately!
Notes
Icelandic Provisions Skyr is a WONDERFUL choice for this smoothie, Pick their Strawberry Lingonberry or Blueberry Bilberry Skyr, or any of them! Siggis is a great option too, it has a slightly tart taste that offsets the sweet of the blueberry.
Substitutions: Use regular milk or your favorite plant based option instead of almondmilk.
If you enjoy a thicker smoothie, I recommend to start off with 1/3 cup milk and add more as you need.
Currently, I’m using the Oster Blender and I like it a lot! It’s quite sturdy and has held up well. I have also heard wonderful things about both the Vitamix and the Blendtec blenders (they are pricier). These are definitely on my wish list!
