It’s hard to compete with a side of nicely roasted, cheesy, garlicy, and crispy baby red potatoes. They are melt-in-your-mouth soft on the inside, and golden, garlicy and herby on the outside… With a crispy Parmesan coating! There’s just no way there is going to be any left for tomorrow. Hey, you might even be lucky if they make it to your actual dinner plate 😋
In all seriousness, half of them are typically gone before meal time even starts! They are too good… especially when they just come out of the oven.
It may be impossible to believe, but my potato loving husband had once disliked potatoes. Yes, it’s true! To a Russian, like myself, that is just weird… and kind of crazy! But indeed he said he didn’t like them, all the way up until one day in college when he tried some Parmesan and garlic roasted red potatoes! He liked them so much that he made his own recipe at home and now we have these super often because there’s really no better way!
Not to mention, our recipe is super easy! Only 10 minutes of hands on prep – the rest of the time these guys are baking in the oven while you wait with anticipation.

What you need to make Parmesan Garlic Roasted Potatoes
It’s a super simple recipe. You will need some shredded Parmesan cheese, olive or avocado oil, garlic powder, Italian seasoning, pepper, sea salt, and of course, some red potatoes.
How to make the best Parmesan Garlic Potatoes
Start by preheating your oven to 400°F. Prepare and grease a large baking sheet. Then, scrub, wash, and dry your little taters. Chop them in half or quarters, until your pieces are about an inch thick.
Get a large bowl and combine the potatoes, oil, garlic powder, Italian seasoning, pepper, and salt. Now for the fun part! Mix everything together using your hands or spatula. It may get a ‘lil messy! But it will smell SO good!!
Plop everything on your baking sheet and distribute evenly.
Pop it in the oven for about 25 minutes. Then, toss carefully and bake for 10 more minutes.
Now, move them closer together and liberally sprinkle with cheese. Yumm…
Bake the whole thing until cheese melts and potatoes are super crispy, golden, and very tender when pierced with a fork.

Ingredients
- 1.5 lb baby red potatoes*
- 1 Tbsp avocado or extra virgin olive oil
- 1 1/2 tsp garlic powder
- 2 tsp Italian seasoning
- 1/4 tsp black pepper
- 1/2 tsp sea salt, heaping, or to taste
- 3/4 cup shredded Parmesan cheese
Instructions
- Preheat oven to 400°F (205°C). Line a large baking sheet with aluminum foil and grease it with butter or oil to prevent sticking. Alternatively, grease the baking sheet directly, or use parchment paper.
- Wash the potatoes and scrub the skins as needed with a potato scrubber. Dry them, then cut into quarters or in half if they are small. You want to end up with inch thick pieces.
- In a medium bowl, combine potatoes, oil, garlic powder, Italian seasoning, pepper, and salt. Mix everything with your hands or spatula until potatoes are evenly coated.
- Evenly distribute the potatoes on the baking sheet and bake for 25 minutes.
- Carefully toss them around with a wooden spoon and bake for 10 more minutes.
- Sprinkle with Parmesan cheese. Place back in the oven for about 3-4 minutes, or until cheese has melted.
- Potatoes are done when they are very crispy and golden on the outside, but tender and soft in the middle. Enjoy with roasted salmon, chicken, or burgers to name a few options.
Notes
You may use larger sized red potatoes, but be sure to cut them into small pieces, about an inch thick.
Before sprinkling potatoes with cheese, move them to the center so that the cheese can cover the potatoes better.
If at the end of the final step your potatoes are still not very tender, bake an additional 5 minutes or until tender.
