Description
This beautiful, gold smoothie is so smooth, satisfying, and tropical! It’s made with Icelandic coconut Skyr, mangos, and peaches and it’s the perfect delicious nutrient-packed breakfast or refreshing snack.
Ingredients
- 5 oz coconut Skyr *
- 1/2 cup sliced frozen peaches
- 1/2 cup chopped frozen mango
- 1/3 cup sliced frozen banana (about 1/2 a medium banana)
- 1 tsp honey
- 2/3 cup almondmilk, unsweetened
Instructions
- Place Skyr, peaches, mangos, and banana in the blender. Drizzle honey over the fruit. Pour in the almond milk.
- Blend until smooth. Enjoy immediately!
Notes
Makes one large 17 ounce smoothie or 2 smaller sized ones.
* If you’re not living in Iceland, in the US you can buy Siggis Coconut Skyr or Icelandic Provisions Coconut Skyr, which are both absolutely wonderful!
You can substitute any dairy milk, or other plant-based options (cashewmilk, oatmilk, etc), however I recommend picking an unsweetened or a lower sugar one for this recipe.
When testing this I noticed that the quality of fruit heavily influenced the taste of the smoothie. As you would expect, the most ripe, sweet peaches and mangos made for the best smoothie! Consider making your own frozen fruit when it’s fresh in season.
