Description

This honey lemon and ginger salmon in foil is easy, nutritious, and has an amazingly balanced flavor. The foil packet packs in all the tangy-ness and sweetness for the perfectly baked fillet.


Ingredients

Scale
  • 3/4 lb (12 oz) wild salmon
  • 1/2 tsp avocado or olive oil
  • 2 Tbsp fresh lemon juice plus zest, about 1 lemon
  • 1 Tbsp grated fresh ginger
  • 2 Tbsp honey
  • 2 cloves fresh garlic, grated
  • 1/4 tsp black pepper
  • 1/2 tsp sea salt
  • Chopped parsley, for garnish
  • Lemon slices, for garnish

Instructions

  1. Place the rack in the middle of the oven and preheat to 375°F (190°C).
  2. In a medium bowl, mix together oil, fresh lemon juice, zest, grated ginger, honey, and grated garlic.
  3. Place salmon on a large piece of aluminum foil and season with salt and pepper. Pour sauce over the fish.
  4. Cover the fish in the foil to make a “foil packet” as shown on the photos above. (Optional: if your foil is thin, wrap the whole thing in another sheet of foil so it’s extra secure.)
  5. Bake for about 15-16 minutes for an average fillet, or 18 minutes for a thick fillet. Salmon is done when it is opaque and flaky.
  6. Open the foil packet carefully and broil for one or two minutes. If you cover up the fish in foil and let it rest, it will continue cooking. Be careful not to overcook.
  7. Garnish with chopped parsley and lemon slices, and enjoy with a side of asparagus and roasted red potatoes.

Notes

Be careful not to overcook salmon as it will quickly become dry. It is a good idea to bake until it’s just almost done, then broil.

Make sure salmon is completely defrosted before baking.

Cooking times will vary for your size of fish. An average fillet will take 15-16 minutes. A thicker one may take longer, around 18 minutes.
